Green Beans – Grandma Style

 

Green beans

Bacon

Salt

Pepper

 

Cut ends off green beans, break up to desired length, remove any strings.  Wash well.

Allow 2-3 hours cooking time.

 

Place beans in pot and cover with water. Add some fresh bacon, good bacon bits, or ham.  Bring to a boil and lower heat to a good simmer.  Cover and cook approximately two hours.  Add water as needed. Midway through cooking process, add salt and pepper.  (I usually taste the water to get a gauge of the seasoning)  Toward end of cooking, let water start to cook off.  Beans should be showing signs of slightly breaking up.  Stay close by during the end of the cooking process to prevent burning.  The beans should be cooked with the water cooked out to the point you start to hear a “sizzle”.  Add more seasoning if needed.

 

Note—consider rendering the bacon in the pot prior to adding the beans.  I haven’t tried this but seems like it should work well.
