Anita’s potato casserole

5 pounds small Yukon gold potatoes (We used about 7 #'s, but that really filled a 9x13 dish)
2 pounds cooked bacon, crumbled
1 cup chopped onion
1 cup “real” mayonnaise, or a little more
1 cup half-and-half
2 cups grated cheese

Boil the potatoes until done, but not mushy. Do not peel. In a medium mixing bowl, combine bacon, onion, mayonnaise, half-and-half. Cut potatoes in half and pour the mayonnaise mixture over. Mix together and pour into a large casserole dish. Sprinkle cheese on top and cover. Bake at 350 degrees for about 1 hour, or until it bubbles.
