BECKY MAYES' KEY LIME
PIE
Deep dish pie crust,
baked
1 envelope unflavored
gelatin
1/2 cup sugar
1/4 teaspoon salt
4 egg yolks
1 teaspoon grated lime
peel
1/2 cup lime juice
(2-3 limes)
1/4 cup water
green coloring
4 egg whites
1/2 cup sugar
1 cup whipping cream.
Combine gelatin, 1/2
cup sugar and salt. Beat egg yolks, lime juice and water until well blended.
Cook and stir the two combinations over medium heat until it comes to boil.
Remove from heat and add lime peel and coloring.
Chill-stiring
occasionally. Do not let it set up at all. Beat egg whites until soft peaks
form; gradually add half-cup sugar and continue beating until soft peaks forms.
Then fold gelatin mixture into egg white mixture. Whip whipping cream and fold
into mixture. Place in pie shell; chill until firm.
