BLACKBERRY COBBLER- diabetes forecast nov 92
1 cup quick-cooking
oats
1/2 cup plus 1 Tbsp
all-purpose flour
2 tsp. cinnamon
1/2 cup melted diet
margarine
nonfat spray
3 cups frozen
blackberries, drained
1 Tbsp orange juice
5-6 packets artificial
sweetener.
Mix the oats, 1.2 cup
of the flour, 1 teaspoon cinnamon, and melted margarine until crumbly in
texture.
Spray an 8 X 8 square
baking pan and place one-half of the mixture in the bottom. Retain second half
for topping.
Combine the
blackberries, orange juice, sweetener, remaining tablespoon flour and remaining
teaspoon cinnamon. Spread over the oat mixture. Cover with remaining half of
the oat mixture. Bake at 350 F for 45 minutes.
