CARAMEL APPLE DUMPLINGS
1 11-oz pie crust mix
or pie crust sticks, crumbled
1/4 cup cold water
6 small apples peeled
and cored
1/4 cup sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
Raisins, if desired
Sauce
1 cup firmly packed
brown sugar
3/4 cup water
1/4 cup margarine or
butter
Heat oven to 400 F. To
prepare pastry, stir pie crust mix and 1/4 cup water in large bowl until dough
holds together. Shape dough into ball and flatten; smooth edges. Roll dough on
lightly floured surface to make a 12 x 18 inch rectangle; cut into 6 6-inch
squares.
Place apples on pastry
squares. Combine suger, cinnamon and nutmeg; sprinkle 2 teaspoons in cavity of
each apple. Add a few raisins. Moisten edges of pastry. Bring up corners to top
of apple and pinch together. Seal edges together; place in 13 x 9 inch pan.
In saucepan, heat
brown sugar, water and margarine to boiling. Pour over dumplings.
Bake at 400 F for 15
minutes; reduce temperature to 375 F and bake for 25 to 30 minutes or until
dumplings are golden brown. Spoon caramel sauce over doumplings.
