Carrot
Cake
Recipe from Doris Durham
2 c. sugar
1 ½ c. Wesson oil
2-3 c. grated carrots
2 c. cake flour or
self-rising
2 t. soda
2 t. cinnamon
4 eggs
1 ½ c. chopped pecans
Mix oil and sugar, add carrots gradually. Add flour and spices. Beat well.
Add eggs, 1 at a time.
Beat
mixture after each one. Add ½ c. pecans. Bake 300 F, approx. 35 minutes. 2 layers.
Frosting:
1 pkg. Cream cheese (8oz)
1 lb powdered sugar
1 c. chopped pecans
1 cup cocnut
1 stick margarine
2 t. vanilla
Let cream cheese sit at room temp.
Add salt. Beat smooth. Mix sugar and butter, add vanilla. Add pecans and coconut.
