Zucchini Nut Bread
3 cups
flour
2 tsp cinnamon
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
2 cups sugar
2 cups shredded zucchini
1/2 cup oil
3 eggs
1/2 tsp shredded lemon peel
1 cup chopped pecans
Beat eggs, add sugar and oil
Add lemon and dry ingredients
Blend well
Stir in zucchini
Combine nuts with 1 tsp flour; stir into batter
Pour into two greased /floured 8x4x2 loaf pans
Bake 2 350 for 55-60 min
Cool in pans for 10 minutes and remove to wire rack
