Chocolate Zucchini Muffins
1 BOX low sugar Devils Food cake mix (any brand)
3 whole eggs
2 cups shredded zucchini
1/2 cup vegetable oil
2 teaspoons cinnamon
1/3 cup skim milk
Combine everything into a mixing bowl...mix well.....no need to even
dirty the hand mixer. Mixes sufficiently by hand. Spray insides of
baking cups with non stick spray, fill cups with batter 3/4 full.
Bake until they only rise, depending on your oven usually about 14 minutes, on 350 degrees.
Makes about 16 muffins.
