Potato Doughnuts

 

1 cup hot mashed potatoes

1 cup scaled milk, cooled to lukewarm

1 cup lukewarm water

2/3 cup shortening

1 tsp salt

˝ cup sugar

2 eggs

1 yeast cake

6 cups flour

Cream shortening into mashed potatoes; add salt, sugar and eggs. Dissolve yeast into warm water. Add yeast mixture, milk and flour. Let rise until double in size. Roll out and cut into doughnuts. Fry in deep fat and drain on brown paper. Glaze.

Glaze: 1 box powdered sugar, pinch of salt, 1 tsp vanilla, enough water to make thin coating. Mix well…. Barbara Daniel….  2001
