2(5-6 oz) cans boned chicken, diced (or four 2.6 oz packages of chicken )

1-1/4 cups packaged seasoned bread dressing

2-oz diced pimientos

1-cup chicken broth

2 eggs, slightly beaten

 

Combine diced chicken, dressing and drained pimientos. Stir in chicken broth and slightly beaten eggs. Press into 6 well-greased custard cups. Bake at 325 degrees for one (1) hour or until done. Cool for a few minutes, unmold and serve with TASTY MUSHROOM SAUCE

Yield 6 servings

 

TASTY MUSHROOM SAUCE

1 small onion finely chopped

2 tbsp butter

1-10oz can cream of mushroom soup

¼ cup milk

¼ cup chopped parsley

Cook onion in butter, stir in soup, milk and parsley; heat

Yield: 1-1/4 cup
