Chicken and rice dinner
2 tablespoons olive oil
4 to 6 boneless chicken breast halves (about 3-1/2 pounds)
1 medium onion sliced 2
cloves garlic
4 cups chicken broth salt
& pepper
1 teaspoon thyme 1
bay leaf
1-1/2 cups uncooked white rice 1 pound canned diced tomatoes
we did this in a crock-pot, on low heat.. the amount of rice
was way too much, and if reduced, the amount of broth should be reduced also.
Also, the length of time was too long, as it made the rice mushy.
Slice onion and dice garlic; saute in olive oil. Cut the
chicken into inch cubes and brown. dump all in crock pot. Remove bay leaf at
end. Original recipe is supposed to serve 6 courier journal
[ Original recipe called for browning chicken, adding onion and garlic until lightly browned. The rest was then added and covered and simmered for 10 minutes. Add tomatoes and simmer 15 minutes more, or until rice is tender ] the reason I did the crockpot is because we had a tough old bird.
