#3634 - ITALIAN TOMATO PIE

INGREDIENTS:

1 (9-in) deep dish pie crust

Olive oil

3 tomatoes, chopped and drained

1 T fresh chopped basil

2 T grated or finely chopped onion

Salt and pepper to taste

½ c low-fat mayonnaise

½ c low-fat sour cream

2 c grated 2% Mozzarealla, cheddar or other cheese

 

DIRECTIONS:

Brush pie crust with oil and prick with fork. Bake at 400 F for 7 minutes. Remove from oven and cool. Layer tomatoes, basil, onion and salt and pepper in pie shell. Combine sour cream and mayonnaise in small mixing bowl; spread on top of vegetables. Sprinkle with cheese. Bake at 350 for 35 minutes or until set. Yield: 6 servings. Talk of the Town..July 2005
