#3359 - JUMBO STUFFED EUROPEAN SHRIMP
Restaurant: Tony Campoli / The Doubletree Guest Suites
INGREDIENTS: 1 dozen jumbo raw shrimp - cleaned, deveined and butterflied with tails
˝ c olive oil and
2 T Old Bay Seasoning
1 dozen strips of uncooked bacon
8oz Feta Cheese
8oz Cream Cheese
1 small bag fresh spinach
Butter
Salt and pepper to taste
Garlic powder to taste
DIRECTIONS: Marinate shrimp in 1/2 cup olive oil and Old Bay
Seasoning. Blend together feta cheese and cream cheese. Sauté fresh
spinach in butter and season with salt, pepper and garlic powder; drain
well. Lay bacon strips down flat. Place butterfly shrimp on top of
bacon. Place a small amount of spinach on shrimp. Place a small amount
cheese blend on top of spinach. Wrap shrimp and stuffing with the bacon
in a tight bundle. Place on a baking sheet and bake at 375 degrees for
8-9 minutes. Serve and enjoy!
