Zesty Chicken Parmigiana

2/3 Cup Italian-seasoned breadcrumbs             2/3 cup grated Parmesan cheese, divided

8 skinned and boned chicken breast halves   

2 large eggs, lightly beaten      ¼ to 1/3 cup olive oil (more)

1 (26-oz) jar spaghetti sauce                   1 teaspoon Italian seasoning, crushed

1 (6-0z) package mozzarella cheese slices

 

Combine breadcrumbs and 1/3 cup Parmesan cheese. Dip chicken in egg; dredge in breadcrumb mixture. Brown half of chicken in hot oil in a large skillet over medium high heat, turning once. Remove chicken from skillet; drain; repeat with remaining chicken

Pour spaghetti sauce into a lightly greased 13x9 inch baking dish; sprinkle Italian seasoning evening over top. Arrange chicken over sauce.

Bake, covered at 350 for 30 minutes; top with mozzarella slices and sprinkle with remaining Parmesan cheese. Bake uncovered for 8 more minutes or until top is slightly browned.
