BLUE BOAR’S SALISBURY STEAK
1 large
onion, chopped
1/8 green
pepper
1/8 red
pepper
2 pounds
lean ground beef
1 teaspoon
salt
1/8
teaspoon white pepper
1/2 cup
cracker meal
1 egg
beaten
1/3 cup
beef broth
Mushroom
sauce
Clean and chop onion and
peppers. Place in a blender or food processor. Process until finely chopped.
Mix ground beef with
pepper-onion mixture, beaten egg and 1/3 cup
beef broth. Mix until well-blended.
Form beef
into patties; brown on both sides in frying pan. (leave drippings in pan to use
when making sauce) Place patties in casserole. Cover with mushroom sauce. Bake
in 400 deg oven for 10 minutes.. 6 servings.
MUSHROOM SAUCE FOR SALISBURY STEAK
drippings
from beef patties

tablespoon flour
1-1/2 cups
beef broth
1/2 cup
water
1 cup
mushrooms
salt and
pepper to taste
Heat drippings in frying pan;
add enough oil to make 3 tablespoons. Add flour and stir until brown. Slowly
add cold beef broth and water, stirring constantly to prevent lumps. Add
mushrooms and salt and pepper to taste. Cook until desired consistency is
reached.
Pour over patties
