Chicken Cordon Bleu

 

8 chicken breast halves, pounded out flat.       8-slices swiss cheese

8-slices fully cooked ham.         Bread crumbs                 one beaten egg

olive oil

 Beat chicken breasts out flat between two pieces of wax paper. Roll up with a slice of cheese and ham. Fasten with toothpicks. Dip in beaten egg and roll in bread crumbs. Brown chicken on all sides in hot oil.  Place in 9x13 baking dish. Pour sauce over top. Bake at 325 for about 40 min until chicken is tender and no longer pink.

 

Sauce:

Equal parts of butter and flour (2-oz each) cook flour in butter, but do not brown. Add ½-cup dry white wine, 1 cup heavy cream and a chicken flavored bouillon cube. Cook that stuff up until smooth, using a wisk. This was something like what was fixed Christmas Eve, 1998. But it was a bit of a dump and I’m not really sure. But it was good, what ever it was.
