Chicken Pizza -A la Wolfgang
Pizza Dough:
1 package yeast
1 cup warm water
1 tsp salt
2 tsp Italian Seasoning
2-1/2 to 3 cups bread flour
3 Tbsp olive oil
Dissolve yeast in water, add salt, olive
oil, seasoning, and then flour. Knead
Let rise in warm place until doubled; punch
down and let rest. Roll out to a 12 x 18
rectangle and place on a cookie sheet.
Topping:
Cook three boneless chicken breasts in oil;
cut into bite-sized pieces when cool enough
to handle.
Slice a large onion into thin slices. Saute
in oil until carmalized. Saute a carton of
sliced mushrooms. Saute some garlic if you
wish.
Spread the onion and mushroom (and garlic)
on the pizza. Evenly distribute the chicken
pieces. Top with tomato slices (four Italian
tomatoes)
Cover with fontina cheese (if you can find
it) and 2 Cups (or more as you desire) grated
Italian Cheese mix.
Preheat oven to 500 deg F. 15 minutes, more
