Cornish Hens with Peanut Dressing
4 Cornish Hens
1 stick butter
1 onion chopped
½ cup salted peanuts
2 cups prepared dry dressing
½ cup orange juice
Saute onions and peanuts in butter. Add this to dressing along with
juice to make it moist.
Stuff the hens, but not too much because the dressing will swell. Sew with
strong thread. Spread soft butter over the hens.
Bake 2 hours at 350 degrees.
