Mexican stir-fry
1 pound beef rib-eye steak, 1 red or green bell pepper
1 medium onion, 1 medium jalapeno pepper
2 or 3 large garlic cloves, 2 Tbsp veg oil, 1 tsp cumin
1 tsp oregano, 1 tsp salt, 3 cups cooked rice.
Slice beef very thinly across the grain, removing and discarding any little pockets of fat you come across. Slice pepper and onion thinly. Core and mince jalapeno; mince garlic. Heat 1-Tbsn oil in wok or heavy skillet. Stir fry everything exept beef and rice. Remove and then do the beef. Serve over rice. Serves 4. (need more rice)
