Ferd Grisanti Restaurant’s Basil Parmesan dressing

3 cups loosely packed basil leaves       1-Tbl minced onion

2-Tbl red wine vinegar                1-Tbl white wine vinegar

3-Tbl Dijon mustard                      ¾ cup grated Parmesan cheese

salt and pepper to taste             1 cup olive oil

 

In a food processor, combine basil, onion, vinegars and mustard. Process to lightly chop basil. Add cheese and salt and pepper. Blend; slowly adding olive oil while doing so.
