Fresh Mozzarella and Tomato Salad

 

Fresh spinach leaves      4 medium ripe tomatoes, cut into wedges

6 oz. fresh mozzarella cheese or fresh smoked mozzarella chesse, sliced

2 Tbsp. extra-virgin olive oil         2 Tbsp. valsamic vinegar

1/4 cup snipped fresh basil         1 tsp cracked pepper

 

Line salad plates with spinach leaves. Arrange tomato wedges and mozzarella slices atop spinach. Combine oil and vinegar; drizzle over salad. Sprinkle basil and cracked pepper over all.

 

Note: fresh mozzarella is worth hunting for to make this salad a standout. You’ll find it in specialty shops; its texture is soft and spongy and its flavor mild and sweet.
