Greek Salad
8-oz boneless chicken breasts ( Louis Rich chicken breast strips work nicely)
3-Tbsp olive oil
½ tsp salt
¼ tsp freshly ground black pepper
1 pint cherry tomatoes (halved)
1- 6 0z jar marinated artichoke hearts, coarsely chopped
½ cup coarsely chopped pitted Kalamata (black) olives
2- 6 0z bags pre-washed baby spinach
4-oz crumbled feta cheese.
If I remember correctly, this made 8 servings, adjust for smaller amounts.
Besides the olive oil, you'll want to add some of the marinate from the artichokes; be careful not to add too much liquid so that your greens are swimming in the liquid.
