Oven Browned Potatoes

 

Heat oven to 425 degrees. Peel and cut up 4 large or 5 medium potatoes (cut bitesized or slightly larger). Place on a wide, lightly greased baking sheet. Drizzle with 2 or 3 tablespoons vegetable oil. Sprinkle with salt and pepper and bake 25 minutes, stirring the potatoes and turning them every 5 minutes or so ( so they’ll brown well and won’t stick to the pan) When most are brown and crispy, remove and serve hot.
