Slightly Rich Sweet Potatoes

 

3 Cups cooked sweet potatoes, mashed (two 29-oz cans)

¾ C granulated sugar                                  2 eggs, beaten

¼ C softened margarine                             1 C evaporated milk

1 tsp vanilla extract

 

 Topping

1 C packed brown sugar                            1/3 C margarine, melted

1 C flaked coconut                                        1 C chopped pecans

 

Beat together sweet potatoes, sugar, eggs, margarine, evaporated milk and vanilla. Pour into a greased 2-quart casserole. Combine ingredients for topping and mix until crumbly. Cover sweet potatoes with topping and bake at 375 deg for 30 minutes.
