12 oz plain flour
4 oz wholewheat flour
1-tsp fine salt
1-tsp baking soda
1-1/2 cups buttermilk
2-large eggs
6 tablespoons unsalted butter cut into small cubes
additional flour for dusting
1. PREHEAT OVEN TO 400˚ F
2. In a bowl whisk together dry ingredients
3. Cut in butter with pastry cutter until it resembles coarse meal
4. Beat the eggs and then mix with the buttermilk
5. Make a well in the center of the flour mixture and slowly pour
in the buttermilk while using a fork to mix in the flour. The
result was very sticky, so we added a bit more flour. It still was
very sticky still, but we went with it.
6. Dust your baking sheet and transfer the dough to the sheet and
gather the dough into a into a round loaf.
7. Cut an X across the top with a sharp knife, being careful to
not cut too deep.
8. Place the loaf on parchment paper on a cookie sheet. Transfer
to preheated oven
9. Bake 40-50 minutes. Tap the bottom, if it sounds hollow, it's
done.
10. Allow to cool before slicing. Serve warm slathered with
butter.
This recipe was primarily based on one that also included 4
tablespoons of sugar and 1-1/2 cups of raisins or currents.
